《 Cured Salmon 》
Welcome again to Half 2 of tasting menu dishes. This delicate starter was the primary time we house cured salmon. We picked up a 300g salmon fillet from the fishmonger on Chelmsford excessive road which was lots for 4 individuals. 🐟

There are many choices for curing flavours however Stew went for citrus. The remedy is a 50/50 combine between salt and sugar, and also you want sufficient to coat each side of the salmon. 🧂

We blended contemporary dill, black pepper and juniper berries. Lay half the combo down on cling movie and prime with peeled segments of orange and grapefruit. Lay the salmon fillet on the combination then prime with the remaining combine. Wrap tightly within the cling movie and put within the fridge for 24 hours. 🍊

The following day, take away the salmon from the fridge and totally wash it beneath chilly water. You’ll seen the fish is rather a lot firmer. Wrap tightly in cling movie once more then return to the fridge for an additional 6 hours. ❄️

If you’re able to serve, slice into 5mm parts. High with avocado puree, items of orange and grapefruit, sprigs of dill, chives, edible flowers and Osetra Caviar. 🌼
