ROASTED AUBERGINE WITH TAHINI
Anybody who is aware of, is aware of I really like techina. I put it on mainly something, I even want it to hummus (!) and with this dish i slather it on. A scrumptious starter or facet for Shabbat or as lunch simply coz you recognize it’s ๐Ÿ˜œ

1 aubergine, washed & dried
1 tsp additional virgin olive oil
salt & crushed black pepper, to style
techina for drizzling
handful pomegranate seeds
black sesame seeds & contemporary parsley to garnish
Preheat oven to 180•C/350•F
Reduce aubergine lengthways in half after which reduce a cross-cross contained in the flesh, reduce deeply however not right through
Therapeutic massage evoo, salt & pepper on all sides of aubergines
Roast for round 35-40minutes till golden and tender to the touch
Drizzle (or slather๐Ÿ˜œ) techina on and sprinkle pomegranate, sesame and parsley
Serve heat or room temp
