
CREAMY TOMATO SOUP

6 massive tomatoes
1 cup plum/cherry tomatoes
1 head of garlic, high chopped off
1 small onion, peeled and halved
1/four cup/ half tube tomato paste
half cup almond milk
1 cup tomato sauce
1/four cup contemporary basil
1 half tsp oregano
Salt and pepper to style
2-Three cups boiling water, relying on how thick you prefer it
Preheat oven to 200•C/400•F
On a lined baking tray, place tomatoes (poke wholes with knife via to stop bursting), garlic head and onion. Sprinkle with salt and pepper and spray evenly with evoo/avo oil
Roast for about 20 minutes or till starting to char
Add veg (squeeze out comfortable cloves from garlic) right into a pot, together with juices shaped, sauté for 1-2 till onion comfortable
Add tomato paste, combine add almond milk, tomato sauce and seasonings and blend for few minutes. Add in boiling water and produce to a boil then let simmer til all veg utterly comfortable and beginning to break down
Mix and serve with some massive crunchy croutons
